What is it?

Brewing fresh yeast for fermentation is a Saccharomyces cerevisiae yeast starter  cream for winemaking.

The Grape fermentation starter is sold in cream and is composed of vital and hydrated yeasts! You will be able to inoculate the brewing fresh yeast with the must for fermentation in all simplicity, without the need to rehydrate!

Applications of Fresh yeast:

  • For the fermentation of grape musts or for the refermentation
  • Recommended dose 10-20g / hl

How to use:

1. In the first fermentation:

  1. Shake the bottle before use;
  2. Dissolve the contents of the bottle in 5 parts of must;
  3. Gently mix until the mixture is homogeneous;
  4. Inoculate directly into the wort tank.

2. In refermentation:

  1. Shake the bottle before use;
  2. Dissolve the contents of the bottle in 5 parts of pied de cuve;
  3. Gently mix until the mixture is homogeneous;
  4. Inoculate a yeast must (pied de cuve) equal to at least 3% of the wine to be refermented;
  5. Add the yeast must to the mass to be refermented when it has reached approximately the same alcohol content.

Tips for correct use:

Before inoculating any fermentation make sure:

  • that the must has sufficient readily assimilable nitrogen content (recommended concentration 140 ppm);
  • that the must does not contain too high concentrations of free SO₂.
